**I do have a question though. Why would you freeze a wiper whole, unless you are planning to get a skin mount or something? If you are not going to eat it fresh, you should fillet it and freeze it properly to prevent freezer burn. And if you did not even clean it, the meat will be inedible within a couple of weeks. **


Don’t mean to pick on you, but there are a lot of people who kill big fish and freeze them just to show off the fish to their buddies. I’m not a catch and release nut, but I hate to see good fish wasted. And freezing without proper care is a waste of fish. They get freezer burned and turn to stinky cardboard. And, if the guts are left in the fish starts to digest itself from the inside. You don’t even wanna try to cook and eat it after a while.

alot of the orientals freeze them whole and eat the guts heads and all. at least they do with the white bass. fishy soup.

Looks like you might have learned something new today Tubedude? I also work with some asian folks who like to do the same thing (Freezing) fish, and basically eating all of the fish, eggs, ect. You just have to remember that others do things their own way, and this is ok. Some people just feel that whatever they do is the only way to do something. So they feel they have to tell others how to do things their way. Just have an open mind and realize that people are different and this is OK! If everybody did everything the same what a boring world we would live in.[fishin]

I have never fished at Willard Bay and I want to go out in the next week or so. What should I use when I see a boil? What should I use trolling until I see one?

Any help would be greatly appreciated.

I have always had great success throwing a crocodile spoon at the jumps. They weigh a ton, and put of a great wounded bait action. My favorite style is the silver with the crystal/white flash. They are great for casting long distance into boils. Good luck!!!

Well Tubedude I’m asian and thats just they way we were taught to do it since I was a youngin. What we do is place they whole fish in the freezer and within a couple of days when we want to eat the fish we take it out and let it defrost then gut it and fry or steam the fish whole, sometimes removing the head as well.
Filleting fish to asians is really in our minds wasting alot of good meet and food. Don’t get me wrong I will fillet a nice trout and put some lemon pepper on it anyday; however that would be the only fish. Think about it you are wasting alot of good meat filleting even the best filleters misss some part of the the meat.


I’ve seen people at Lake Powell filleting huge huge stripers and only taking meat the size of a small trout in the community ponds or even less. We cook it differently and whether it’s because people in the old country didn’t have food to waste or they just like doing it that way not so sure but belive me when I say there is never a fish that just sits in the freezer and does not get eaten in an Asian house. Fish and rice is like our burgers and fries.

Bad News everyone after fully defrosting this sucker I caught monday I re-measured to get picks but it only came to 24.5 inches well shy of the state record Thanks dad for the intial measurement!!! Well now I’m just going to eat it. if it was the record I was going to mount it but I’ll have to try again this week.

CW, I’m with you on cooking whole fish. Its a symbol of good luck as well. My mom steamed the wiper we caught last week with some ginger, green onions and rice wine and it was great but my kids probably would have eaten more if it was filleted and coated in greasy breading (owing back to my wife’s heritage).
Its great having bi-racial kids, they can experience everything – well except eating the fish eyeball, that’s an old world tradition I doubt my kids will try. I haven’t had one since I was a kid but do remember liking them.

That was a Great fish you caught and I’m sure it was delicious! Save me an eyeball.

will do night flyguy!! My wife is also of american hertiage and it was a fight to get to try asian style fish when she was use to trout Salmon. and Mahe Mahe. She only ate the stuff at the restaurants.

My mom gave me that same recipe for the wipers it is really good I use it for whitebass also but A Wiper has a ton more meat. HMMMMM GOOOOD

No record, but still very nice fish. Probably was around 6lb like you originally guessed. The one my daughter caught last night was 22 inches and was almost 4 lb. I know what you mean about alot of meat wasted, when i fillet them, i see the meat thats left on it. Wish i knew how to cook it whole :laughing:

Yeah my dad did the measurement for me so I thought I had the record but I knew the fish didn’t weigh 10 pounds like the others said it should if it was 30 inch so I had a suspicion. Good eaten anyways though. The boils for us were really fast as well but we were chasing them so much we didn’t get a chance to cast more than twice. Your daughter must have had a great old time bringing them in I know my line zang out a few times.

night flyguy commented with a recipe on the post. It is really good if you like rice and it’s alot healthier.

I sometimes just fry them after taking the heads off. You just put a little salt and pepper all over the fish somtimes I add ginger But I think you will like night flyguys way alot better.

Thanks for the clarification on the actual length, It didn’t look like a thirty incher in your pics,it had no girth, and that’s why I was suspicious of the real length, still a really nice fish,lots a meat on a 24 1/2. Enjoy!

yeah you were right I previous said it didn’t fell like a ten pounder but more like 6 pounds so I was a little suspicious myself and had to dethaw the thing

By length it’s the biggest I have seen or heard of come out of the bay,But sadly it didn’t weigh? It’s still a mounter for sure in my book. I don’t keep wipers very often, so if I take one out once in a while shouldn’t hurt the population.

:sunglasses:Sorry if I offended you. My question was not supposed to become an issue of race or culture. I am well aware that there are many different styles of fish preparation and I was not making any judgments. But, I have seen too many fish simply dumped in freezers to show off for a couple of months and then thrown in the trash.


And, before you accuse me of wasting fish, read the PDF file I posted a while back on using all of the fish you catch…including heads, rib cages, skeletons, etc. I use all of the fish when I can but many anglers DO waste a lot of good eating.


For some species of fish, freezing before final preparation makes good sense. Freezing breaks down the tough tissue in species like carp or others with firmer flesh. But, what many people do not realize is that if the innards are left inside a fish, it begins to digest itself from within, with its own enzymes and digestive juices…a process called autolysis. The longer the fish is left uncleaned the more this can affect the flavor and texture of the fish.


PS. Sounds like freezing really shrunk that 30 inch wiper you got. Now you have to go get another one…only bigger. Good luck.

[;)]No big deal tubedude was not offended just explaining why I placed it in the frindge. I had no idea about the guts thing my parents have been doing it for years but mostly they fish for channel cats.
Yeah I was pretty dissappointed after I thawed it out my dads measurement was way off. I kind of figured it out when people were saying it should weigh 10 pounds I knew it wasn’t close to that weight.
It was actually the first wipers I’ve caught in five years.
Mainly fish at UT Lake for bass and channel cats.
No offense taken I enjoy reading your post and get alot of good techniques from ya so no hard feelings!
