Been catching allot of perch n crappie this year. Usually make allot of chowder, fish tacos n fish fry’s. Needed to go a little different route for a change. This was a great and simple way to go. I didn’t really use a recipe as I rarely do. Just made a basic remoulade (Googled several recipes to get a basic idea and came up with my own concoction from there) Fried the perch fillets in a cajun fish fry I picked up at the local market n slapped it all on a nice crusty French sub roll with tomatoes n shredded lettuce.
Looks mighty tasty.

That’s what I grew up calling Crappie. Sock-ah-lay…(pronunciation). French for “Milk Bag”, I have no idea why haha. Southern Louisiana. I had no idea they were called Crappie until I got to Utah in 2011.

Looks delishous… We sometimes deep fry Wally and Wiper from the bay and have a nice samich wit tarter and catsup.
Nice to learn new ways to prepare.
I just got back from Hyrum and got 35 perch to filet up this evening.
Think I’ll just do standard McCormick Cajun deep fry.
