perch recipes please!!!

I went to Yuba sunday and caught a few perch… I have heard many great things about how great this meat is, and so last night I finally fried some up. I have to say… I agree. However, it seems like this is one of those things that could be really great instead of just good.

Can anyone give me some advice on good ways to cook perch? It would be greatly appreciated. Thanks in advance.

There is a recipe board on the main fishing forum page. There are alot great recipes that I’ve used for all different kinds of fish, not just the one mentioned in the recipe.

Secret family recipe

1 box of Dixie Fry

1 cup of flour

1 cup of Bread crumbs

2 tbsp of sugar

Take the flour, bread crumbs and 2 tbsp of sugar and mix them up in a 1 gallon ziplock bag

Mix 1 cup of water to 1 package of dixie fry in a bowl I usually do 2 packages and 2 cups of water and stick it in the fridge for about 30 minutes.

Take your fillets and throw them in the zip lock with your flour and bread crump mixture them make sure there thurly coated.

Then take a set of tongs and dip your flour crumb fillets into the dixie fry batter. Then deep fry until golden brown on 350 degrees. Set on a plate with some paper towels to drain the oil. Serve with tarter sauce and lemon wedges. Enjoy!!!

Dip the fillets in flour
Dip them in egg wash
Dip them in bread crumbs seasoned with any creole seasoning (Tony Casheres)

Fry in oil at 375* till golden brown. So good!!

He has a sticky at the top called “Best of the Best.” On there after scrolling through for a while, you’ll see his recipes, and he has KILLER perch recipes includeding his legendary “PIGOUT PERCH CHOWDER” that you’ll hear raved about on this board all the time, although not as much this season since the perch fishing has been slow…

i highly suggest if you fry them to use a cast iron skillet and use lard to fry them in it i realize not the most healthy way but oh so good.
