Caught some of these pigs yesterday … Can’t discuss the location because certain BFT members think they own the waters that I catch these from, and they get their shorts in a ruffle if it’s discussed.


I hear that juniper berries are the newest thing for adding to brine for smoking or marinating trout and salmon… Has anyone ever tried this?


I have several juniper trees up on the hill behind my house and four for the smoker … I guess I’ll just experiment, or look for something on the internet.

About the Juniper Berries…don’t overdo it. A little flavors a lot. Better to just pour a little gin in the brine…or the angler. I have sampled fish that had the juniper flavoring and it was…“unique”. Not to my taste. When it comes to good trout less is sometimes more. Basic spices and a little dill or lemon is all ya need. But you never know unless you try it.

Most folks would never believe you could get fish like that out of Bountiful Pond.

I like Pat’s idea about saucing the chef. Heehee. But I’ll second the light-touch when it comes to anything spruce. Back in my brewing daze - we dabbled with Spruce beers - and one key was “young fresh” spruce tips, and the type of spruce makes a difference. Juniper berries do have a lot of pungency.
I was never a big fan of the spruce brews - though an occasional Holiday Ale with other spices in the mix - made for an ‘interesting’ sampler.

Mixing the flavors in my mind - doesn’t sit well. Minty/Aromatic fish - hummm. Maybe if there’s a ton of Cayenne in the mix!!! (at least then your buds’ll be numbed)

Great looking fish Mr. Wave…Something about the Deleted lakes in Utah gets all the feathers of some select fisherman ruffeled. I respect any angler who does not want to name where they fished…it is their right to not say where…however I have no respect for anglers who verbally “punish” those who wish to share. Mr. Wave…don’t let the Deleted get you down. Thanks for posting.

Speaking of air, I cleaned one and thought it had been eating buckshot… It was clear full of those little round snails… I’m surprized it even bothered with my fly… It must have thought it was dessert, I guess.

One of my favorite seasonings for trout is Montreal Steak Seasoning. No joke, it’s incredible. If you like lemon pepper, you’ll love this.

It’s worth a shot if you have some handy.

Yeah … I hiked up on the hill and picked one of those juniper berries and bit into it… It reminded me of a bad morning after that I had many many years back… I think I’ll stick to the old pickling spice, lemon and pepper stuff.

I pick up a jar of John’s Spice from Pickles Place in Arco every summer. It’s great on steaks, and good on about everything else. But - don’t think you can get it at Costco.

Your guess had a high probability of being the actual body of water (joke or no joke) based upon previous history on this forum; whereas, TD’s did not. Judgement call on our part.

+1 on the Montreal Seasoning, I use it often…Bluegill fillets sprinkled with it and lemon juice wrapped in foil, make my favorite fish tacos.
