To many answers.
I like fish taco’s from wipers or Crappie. I like catfish fried. I like walleye either breaded and deep fried or panfried in bacon drippings with homefries.
I don’t eat trout.
Perch? either battered and fries or chowder.
I’m rather new to this whole fishing thing, and haven’t gotten to try many recipes. So far, I’ve really only had baked trout (which is pretty good), batter-fried catfish and walleye. Usually when I try a fish for the first time, I like to eat it with simple egg/flour batter, no spices…so I know what the FISH tastes like. After that, I go for the flavorings and different methods of cooking.
I got a fish cook book for Christmas. So if/when I get the main ingredients, I’ll start tryin’ new dishes. I’m really excited to taste the Walleye Pinwheels!
Oh yeah, and they’re not really fish, but crawdads are nummy too!
I only eat perch, wiper and walleye deep fried!! My family will eat trout, catfish panfish deep fried or oven baked.
We get lots of “main ingredients” thru those holes in the ice.

Truth be said…
Trout>> smoked
all the rest deep fried with taters
For any trout, I fillet them out leaving the skin on, baste with butter, salt & pepper and a little lemon pepper. Place skin side down on the BBQ until the meat is flaky. The meat slides right off the skin when cooked. Yum.
I agree that any white meated fish should be battered & deep fried or pan fried.
Perch and walleye deep or pan fried with some breading or batter, trout and salmon are grilled on the BBQ after most any marinades are applied.
Just finished a dinner of perch and gill tacos. Bread (panko) and fry the fillets in oil. Mix some chipoltles and adobo sauce with a half cup of mayo. Spread the chipoltle mayo on a tortilla, put a couple fillets on top, sprinkle with shredded cabbage and top with a little salsa. MMM!
Well me and my wife are known for the famous Panco but now we have switched oils from canola oil to cooking them in virgin coconut oil. Our latest is a speedy recipe not much prep time just dip the wet filletts in flour then fry in coconut oil and season with this spice called grillin guys. I don’t work for the grillin guys but I would encourage you all to search it out in your store cause it’s good on everything. My other favorite last but not least is redmond real salt season, garlic, and onion. Enjoy Pikeman GOFISH
I eat fish all ways from raw to deep fried! Although I will only eat saltwater species raw! I discovered that wiper came out great when baked with a topping of salsa. Delicious! It should work well with other white-fleshed fishes too.
