fish and chips

I went to willard sunday evening to try for the wipers. fishing was pretty slow, did catch one nice wiper, and my buddy caught a nice 23’’ walleye. We did have a couple other wipers on, but came off. Anyway I usually never keep fish, but everybody says how good these wipers are, so I decided to keep him. My daughters want me to make fish and chips. Whats a good batter for the wiper. I was thinking I would throw them in the fry daddy. thanks..

Beer batter-

1 Egg, beaten
1/2 (6 oz) beer
1/2 tsp salt
Flour

Beat the egg, beer, and salt together, add enough flour to make batter, ~3/4-1 cup. Rinse and dry fillets, put them through the batter, then fry. Great with cocktail sauce on top.

thanks, i will try it, but if I like the fish I will have to have a filleting lesson. And also tubedude said to remove the red meat, what is that all about?

It has a flavor that is in some peoples opinions is a little off. I think it matters on big fish but not on the little ones. IMOP

FYI…cut the bloodline out of the fillet. In my opinion it will tast better

Ok, here we go… I agree cut out the dark portion of the wiper filets.

I am an avid fan of deep frying the local catches especially Wiper, Eyes and Perch but this recipe is to die for, even for trout (got to pull all the bones from the trout). I have had friends tell me they didn’t care for fish till they tried mine…

Simple as simple can get…
Here goes…

Head to wally world or Smiths and grab a McCormick brand (golden dipt) Cajun seafood fry mix in the red and blue box.

  1. Cut the fish into uniform chunks and soak in 1 cup milk mixed with 3 tablespoons of vinigar for at least 5 minutes.

  2. Dump the dry mix into a 1 gal ziplock.

  3. Remove fish and place into a strainer to remove the majority of the liquid.

  4. Place fish into ziplock and shake till coated evenly.

  5. Deep fry till golden brown and enjoy.

Salmon from the store is also a favorite. I’ll even do the exact same thing with shrooms… ummmmm I getting hungry just talking about it. Throw in a few cut potatoes and dinner is served.

Shore lunch is another really good batter. I think it’s my favorite. I know Cabelas usually has it. Try a few different styles. I’m now hungry after reading this post!

Yea it will curdle… the milk and vinegar is basically a poor mans butter milk.

You can’t taste the vinegar, I use it on the smoker as well when I smoke my trout filets. Just a bit at first before I add the seasonings.
