So now we’re at home with some burbot fillets, but I can’t recall the recipe for the “poor man’s lobster.” I tried it at the Lost Dog bash, and it tasted pretty good so I would like to fix mine that way but I don’t recall what the ingredients were besides water, sugar, and ??? Can anyone help me?
I filleted mine and cleaned them good. I then boiled them in water with lemon pepper in it and dipped them in garlic butter. Very good eating.[;)]
Hey Lynnie, if I’m not mistaken Ryno’s boss was the one that cooked the burbot at the bash. I’m sure you could send him a PM and get the recipe, here is link to his profile.

we just soak them in egg and milk 3 egss maybe 2 cups milk for around 15min then use crushed up salteens mix with flour then coat filets and deepfry or bake use your favorite seasonings what ever thay maybe mine are garlic salt tony chachere’s creole lots of that i like the zip it gives then a touch of peper and iam good but it works great with any seasonings. fry till golden then pig out. i think it would be good for every one to throw there favorite bot recipe up.so we have some differant ideas.ash
Wasn’t there some sugar in that recipe? I recall that the water to boil the “poor man’s lobster” fillets in had some sugar, but that’s about all I recall.
IT was water, Old Bay Seasoning, and parsley.
He said to dip it in butter with garlic after you boil it.
Glad to hear you caught some… Cuz we sure didn’t[frown]

This is what I did two weeks ago with my burbot, it was excellent.
1/2 yellow onion-diced, 6 tablespoons of butter, 4-5 sprigs of fresh parsley-finely chopped, little bit of fresh garlic-diced, cayenne pepper or black pepper-whatever you prefer, lemon juice, shredded parmesan cheese, toothpicks, package of Ritz butter crackers, about 20 fillets give or take, and a small can of Geisha (brand doesn’t matter, just make sure it’s real) Crab Meat (they sell it next to the sardines and tuna).
Saute the onion, garlic, parsley, pepper in the butter. Make sure the butter doesn’t burn but the onions still get soft. While this is cooking crush the Ritz crackers into a powder (Ziplock bag, roller, shoe..)Take off the heat and mix in the crab meat and crackers.
Lay the fillets out next to each other snug and spread the mixture on top of the fillets, spread some parmesan on top with some lemon juice.
Roll up the fillets loosely and stick a toothpick in it to keep it from unrolling. Continue to do this with the other fillets.
Put in glass casserole dish, cover with foil, and cook for about 30 minutes at 325*. If the fish does not flake then cook longer.
I just made myself hungry…
I tried something a bit different. It was easy and fantastic.
All you need is:
parchment paper (don’t use waxed paper) or I’m sure aluminum foil work work just fine.
thin sliced green peppers
sliced mushrooms (fresh are always best)
thin sliced onions
thin sliced garlic
Salt - Pepper
soy sauce
honey
olive oil
crushed red pepper flakes
and Burbot - if you don’t have Burbot, go catch some :).
Lay out a nice sized piece, about 1 square foot of parchment paper, and put a bit of non-stick spray right in the middle.
Put 2 or three strips of Burbot Fillet about 3 inches long each in the center on top of the oil.
Add peppers, mushrooms, onions and garlic.
Mix 1/2 cup soy sauce with about 2 tbsp honey and 2 tbsp olive oil.
Drizzle the soy sauce mixture over your fish and veggies and sprinkle with salt, pepper and red pepper flakes to taste.
Next fold over and roll up the paper to make an envelope that wont leak. Put it on a cookie sheet just and put it in the oven on the middle rack for about 12-15 minutes.
I made four of these at the same time and they were gone in no time. Burbot is a great tasting fish and really fit well with this oriental inspired meal. It was so easy that my kids even helped (they refused to eat the fish - but that is the story of my life).
give it a shot - I would love to hear if it worked as good for you as it did for me.
GLG
What was that battered fried Burbot they had there. That is how I8Trout2 wants his 1 burbot cooked. I want to throw in a couple pounds of Trout into the fryer too. Anyone?
