You aren't nuts at all BUT as far as cooking them you can't go wrong with filleting and frying (seasoned cornmeal, breadcrumbs, or seasoned flour of your choice, etc. makes everything better) any member of the sunfish family. The smaller members are excellent cooked whole with the scales, guts, and head removed. I took a buddy of mine fishing a couple of years ago and we got into some fat bluegill. I always ate bluegill, crappie, < insert sunfish name here> whole as a kid so I made them that way on that occasion. He said the taste reminded him of crab because it was so sweet.
