now out of print. I may do a new one someday
when both myself and the fishing slows down more.

:sunglasses:Pikeman was gracious enough to post his wonderful recipe last year, after the kids’ perch derby at Jordanelle. I went back into the archives and copied that recipe
and made it into a PDF file for those who did not get it before.

:sunglasses:I generally grill, bake or smoke my salmon. Have never tried it in a chowder.


Are you looking for something of a “white” chowder (New England style) or the Manhattan style
with tomatoes and veggies?

There use to be a place next to the capitol theater that had the best salmon chowder all I know is it tasted great and it was pink in color. I wish I could have got there recipe before they closed. I will try these recipes you sent thanks for your help.

:sunglasses:**Most really great soup and chowder recipes are developed by seasoned chefs (chefesses) who appreciate good food and know their way around the spices and seasonings. **


There are many super soup recipes that have gone to the grave with their originators. But, the good news is that you can start with any good basic recipe and tweak it a bit to your own tastes. To me, that is the fun of cooking. Sometimes it works out great. Other times
well, there are some recipes that you only want to serve to unwanted guests.

I personally can’t see hiding the wonderful flavor of salmon in a soup, but I guess everyone to their own taste.

For any of the white chowders, you just follow a good clam chowder recipe, using any “meat” of your choice. I make a potato soup, following a chowder recipe, that is so rich that you can’t tell it isn’t a good clam chowder. Mostly this means using heavy cream and lengthy simmering time.

I’ve never put any type of fish into it, but after reading some of the recipes posted in the last couple of days, that may be one that I will try.

BTW TD, I read and copied some of your recent recipes, and put on pounds just reading them.

You are probably right about how is was made I wouldn’t normally use salmon for that either but when I had it from that restaurant it gave me an idea. Thank you for all the recipes. I never would have thought about keeping recipes that weren’t very good that is kind of funny not sure i could ever do that though.

LOL that reminds me. Got the mother-in-law showing up in a few weeks!

My son has a habit of outfishing me for perch thats all he likes to catch.It is fun seeing the kids catching fish but when it is slow like it was saturday they tend to get bored. Thats when you have to keep them entertained otherwise they dont want to go fishing again. Summer is the best time to take kids fishing because they can jump in the water if they bored.:face_with_tongue:

That is a good point but there is always sledding if they get bored ice fishing if it isn’t to cold. My kids seem to find fun everywhere it makes no difference what is going on. I took them camping a couple years ago and they had a great time playing with the bugs I never would have thought a bug could be so much fun. Makes me laugh to think about it.

That is so BAD!!! As my oldest would put it MEAN MEAN MEAN AND RUDE!!! It is pretty funny though but I didn’t say that.

here’s my recipe for salmon chowder this always sells out @ my restaurant;
2oz. panchetta or salt pork fine diced
4 cloves garlic diced
2 tbs shallots (optional)
2c onion diced i use red but any is fine
1c celery
2 bulbs fennel aka anise diced (remember to cut out the core)
1 bell pepper diced
1/2c flour
4 oz unsalted butter
1/2c white wine or apple juice for our non drinking friends
1/2 gallon fish or chicken stock
1/2 gallon milk
1/2 gallon cream
2 lbs diced and roasted red potatoes
2 lbs salmon or any fish fillets diced
.salt and pepper to taste
brown panchetta add
garlic and shallots saute until fragrant don’t brown garlic!!!add veggies cook until onions are traslucent. add butter and flour whisk well over med heat then add liquid ingredients starting with wine bring to boil turn down heat and stir till thickened add salmon and potatoes at the end. s n p to taste and enjoy

And which restuarant is that please? I know a girl who loooves salmon
