The most difficult Big Game animal to hunt (US)

In your opinion what is the most difficult game animal to hunt in North America? You can base your opinion on personal experience, a friends account, books or just your own idea.
For me it would be a Boone and Crockett class Coues Deer. I’ve never hunted them but friends who have tell me they are incredible! Next I would rank the Mule Deer (B&C class). I have hunted them and large, mature trophy bucks are nothing like the young bucks.
