For your tiger, go to Wall Lake up in the Uintahs. Easy to get to, beautiful scenery, and every other catch will be a tiger.
My son and I have the goal of catching a fish in every county in Utah (we've hit 10 so far). I bit different than your goal. I like the multiple species goal--I'll have to ask my son about making that our next one.
