This time of year, one of the easiest places to catch fish is in Utah Lake, which is about 30 miles south of Salt Lake City. You should easily be able to catch white perch and largemouth bass from shore, and if interested, huge carp and catfish and if you're really lucky, walleye. Utah Lake is a huge lake, but there is plenty of access for this type of fishing. It can get crowded on the weekends, but if you go during the week, it's usually pretty easy to get a spot to yourself on a dike, which is where the fish are.
If scenery is what you're looking for, then this may not be the place for you. I'd stick with some of the other recommendations on the page. Tibble Fork Reservoir, which is located up American Fork Canyon, is my personal favorite as one of the most beautiful locations in Utah. Up there, you'll have the opportunity to fish for trout only, and most of them are small, but it should be fun. It will likely be crowded on Saturday, but again, during the week, it's a great place to go. If you watch the hillsides in the morning and evening, you may see deer and elk in that canyon as well. Toward the bottom of the canyon, you can sometimes see mountain goats too.
