I remember my dad would always give away all the panfish and catfish he caught because they were too difficult to fillet. I usually cook the panfish whole (cleaned) and I have yet to catch a catfish, but I am going to try this method of fillet. I also watched the perch video and am excited to try that next time I catch some.
It looks like you would need a very sharp knife, that is one part of the operation I have down - my knives are very sharp.
