Pathogens and Bacteria in the water are usually fought off by a fishes immune system as soon as that fish dies the immune system stops and all the pathogens and bacteria start creating colonies breaking down cell tissue. Ice or freezing can slow the build up of these colonies The longer the fish is left out without ice the more colonies will form.
