One question for ya. And maybe this deserves a new thread...how exactly do you fry up your perch? I cooked up a batch of perch earlier this fall. I coated the fillets with some flour and mild spices and fried them in butter. IMO the butter was just too strong for me. Maybe use coconut oil next time, I dunno. What's your technique?
