When we fish for stripers in a river, we use a white plug or swimbait. Sluggos worked on top work well. When we bounce a bunker off the bottom like I believe your doing. I hook them through the back. Weight on sinker depends on tides or current, minimum of 2oz. Our rigs, the lead is about 1 1/2 ft from the hook. If you want to tie the weight on your line any knot should work. I just make a loop and feed it threw its self. I have no idea how large your stripers get, but I use 20lb braid for my stiper rods. I've seen guys use smaller and get broken off a lot.
