I use cut bait catfishing for big blues. I usually go catch some gar or carp from the river and filet a couple right there then throw the remains back in the water for the turtles and bottom feeders to use up.
I take the cut bait home and cut it into slices about 2 inches wide and 6 inches long and leave it pretty thick. I put those into a zip-lock bag with about 4 table spoons of garlic salt and shake it up good. Then I put the in the refrigerator overnight and use it the next day.
If I am not going fishing the next day I just freeze it until I need it. A lot of times if I am catching big 8lb-10lb carp, drum or gar I'll go ahead and keep 4 or 5 and make several bags and freeze them for use later. I catch almost all my giant blue cats on this type of bait.
I even catch a lot of channel and Flathead this way even though I prefer to use live bait if I am purposely targeting Flathead.
There ya go, and to add, I have caught Large-mouth Bass and other species of fish using my cut bait technique but it's rare.
