[#0000ff]Glad you scored enough for a boil. Two ways of going about it. I like to twist off the tails and claws first...discarding the rest. Once you twist off the tail you also need to hold the meaty part and twist off the section with the fins on it. That will pull out the "vein"...which is the poop chute. Now you can boil or steam the cleaned tails and claws. I'm attaching a page from a book I wrote back in the 80's.[/#0000ff]

[#0000ff]Keep them on ice until you cook them and don't let them sit for more than a day after they are killed and cooled. They go downhill fast.[/#0000ff]

[#0000ff]I like to boil them in some Zatarain's Crab Boil. You can get it in packages in the spice section of the market. Otherwise, start with enough water in your boiling pot to cover the dads well and then add some salt, pepper, cayenne, mustard seed and whatever spices you like. Get the water boiling and then dump in the mud bugs. Only takes a few minutes to turn them red and done.[/#0000ff]

[#0000ff]If you preclean them...removing the claws and tails...you can also do a quick "beer steam" on them. Pour a can of beer into a pan with a tight fitting lit. Crank the heat on high until the beer starts to bubble and foam. Dump in the dads and then push down on the lid to creat pressure. Within a minute or so the pressure will build up and the beer will foam up around the critter parts. About 3 to 5 minutes and you are ready to pour off the killed beer and eat the crustaceans.[/#0000ff]
