A lot of foods have already been mentioned but I'll list my favorite food for backpacking: Bagels, Precooked Bacon ( store bought because you can open a new pouch at any time without worry about it going bad) Cream Cheese ( last first couple days if cool weather), peanut butter, smoked salmon in pouches that don't need refrigeration (not my own but purchased), salmon jerky, pouches of salmon or tuna, fig newtons ( taste just as good smashed), pepperoni , salami, macadamia nuts or if weather fairly cool chocolate covered macadamia nuts (great dessert or for snacking). I'll do the pasta and instant rice on longer trips. I do bring some fresh fruit and possible carrot sticks for the first couple day despite weight because I just don't like everything to be dried or salty. Plus the weight is gone after you eat it the first few days. Some of my items might be relatively expensive but I seldom buy freeze dried anything. They're generally crappy and just as expensive as some of the alternatives I mentioned. Occasional I will through in some freeze dried food on longer trips. Either I won't eat it or after so many days on the trail anything taste OK with calories.
