New Orleans options in August

I am from Australia and will be in New Orleans in mid-late August.

Could you please suggest a good charter boat operator from New Orleans or New Orleans region?

I am an experienced fisherman but have no idea as to what I am going to fish for, from my limited searching I understand that it is a good time for Redfish?

I would love to here any suggestions.
