If you can go within one week after stocking, in the long run you will probably do the best, but it's unpredictable. The only catfish I caught at Sunset this season was 4 weeks after it was stocked, so you never know. I caught it on a chunk of hot dog. I also had a big carp that day, also on a hot dog, but it broke my line at the net.
Three other trips to Sunset since then got me zero catfish and only one bite. These trips were all within a week of stocking. The bite was on a hunk of anchovy. Luckily I got a carp on my last trip (6-15) which was 26" and weighed 8 lb, 1 oz I was using corn for bait.
If you want a good fight then you might consider going for carp as well as catfish. I know they are in Lamb & Sunset, but I don't know about Lorenzi. I've never fished there.
