SOT are best as fishing platforms IMHO.
I don't know how much you know about kayak fishing but I can show you how I set mine up. I have a milkcrate for the rear to carry fishing rods and tackle, an anchor trolley, mounted fish finder and leashes for rods, paddle, etc.
