Probably saying it is because of the snails is too much of a generalization and an all around inaccurate statement. It is more likely to have to do with the water temp and other food factors also. Just that the only experiences I have had with fish that I knew had eaten lots of snails was not very good.
It is good to know that it doesn't hold true all the time.
I don't take many trout home to eat very often anymore, so it is hard for me to compare. If I do much more winter fishing, then I might have to bring some home for dinner to get a better idea, or refresher course, on what a "cold" water trout tastes like again!
