I've never tried carp but I have a neighbor who does eat carp from time to time. My father grew up in Louisiana and they would eat carp as well. He claims that if you can get a carp from good water and soak the carp meat in milk or iced salt water overnight, it is decent. My neighbor says the same thing. I haven't tried it. The carp I catch get used for catfish bait.
