Why halibut? I ask this because in my opinion halibut is tasteless and yes I've eaten fresh halibut that was cooked the same day it was caught. Sure its tasty breaded and fried but in my opinion has no natural flavor like a salmon or trout.
Here's my favorites
1.Salmon (Silver, king, and sockeye)
2. Steelhead (No bbqed Idaho fish after Oct. After Oct they hit the smoker or the neighbor)
3. Fresh wild trout or a planter that has been in the system long enough to get a color other than white to its meat.
4. Salmon Shark, the pig of the sea *tastes like pork but has a high mercury content so eat sparingly
