What kind of fish is this?

Whitefish for sure and one of the best smokers around. Nothing like a bucket of these guys. One of the few fish I still brine to smoke. Simple salt brine, enough salt to float an egg. Soak 4 -8 hrs depending on temp, fish size and preference. Smoke em up with your favorite chips and enjoy.
