when you go to get you a bag of corn meal mix, be sure to get one of the higher grades, saving a few pennies here is not worth it, When doing finess cooking like breadings cakes and such, starting with the best will get you further ahead with your cooking experiments.
after 45 years of my own cooking experiences, I have found theis brands of flower and corn meal mixes to be the best. Not just for taist but also for the number of products that can be made from them with ease.
[ul][li]Martha White "corn meal mix, Flower with Hot rise"[/li][li]Aunt Jamima "corn meal mix"[/li][li]Gold Medal "self riseing flower"[/li][/ul]I prefer the martha white brand for a number of reasons, not only dose it make a great fish breading, it also makes great dumplings, biscuts, and gravies/rouges, The corn meal mix you can make a great corn bread, Grits,
one other tip, when you find a recipe you like, you can put all the dry ingrredients togther and pre mix it so all you need do is add egg, water, or what ever other wet ingredients you come up with.
the best thing I like about my recipe is there is no waist, what ever batter I have left over I pour in to a small pan or muffin tin and make corn muffins.
*** I have found I can double and tripple my recipie and still only use one egg.
some people like cilanthro "spelling" I my self prefer cyane pepper. a dash or two makes fish sweeter. "not hot like you would think"
