I was thinking of checking out the area when the water is in the 40s and 50s. Maybe there will be some prespawn smallie activity. If not, I can always head back down to the rocky areas closer to the dam.
As for the sulfur affecting the flavor of the fish, I think it's possible. I've eaten a couple that were caught by the dam, and they honestly were as tasty as the walleye I kept the same day. There could be something to it.
