When should a fish be left alone ???

i fish for those steelhead in the spring. i dont like to keep many hens they usualy are softer than the bucks. but the fish i do keep i bake, smoke, bbq, fry.... i am yet to have a steelhead that i dont like. soft or not. if they are soft i usualy bread them and fry them.
