I knew to trim off the dark meat. My son preferred it to the bass for some reason. But he did try a little bit of dark meat that was on one piece. He said I was right, it tasted like mud. But really, the carp tasted good. I wouldn't have any problem with another one from clean water. I have seen them frolicking in places nobody should be eating from.
