Hi Stikbow,
The best hours for fishing are usually one hour before and after sunrise/sunset. Other than that, it's getting super hot during the day so your plan would keep you out of the severe heat. I usually prefer to go out just before sunset and fish through the night then leave around 8am or whenever the bite stops.
I'm not sure where you'd be able to get your truck close to shore but be careful driving close to the waterline, it tends to be real soft.
I usually buy Sardines at Walmart (the bags say anchovies, but they are sardines.) I've found anchovy at Laker Plaza, bait is a bit more expensive there.
I'm sure somebody will chime in with a suggestion for location.
