Headed for Salmon Sat Morning

On cooking steelhead- if you get a good fresh fish, take your fillets and brine them for a few hours in 2 tablespoons of salt in 4 cups water (and dried garlic or whatever herbs you like). Then dry them off and throw them on the grill with some soaked alder wood chips... this is how I like them. If they're close to spawning and kind of soft, smoke the heck out of them and freeze or can them.
