I like to can them. They make excellent fish patties. If i catch some that are firm i take a fillet and lay it on a plate and place in the freezer to make it really cold (but don't freeze). Then i take a 1/4 cup olive oil and heat in a pan bring oil to a frying heat. Them cover the cold fillet with a combination of crushed cracked and your favorent spices ( i like alpine touch and garlic with a pinch of white pepper and celery powder finely chopped onion and bell pepper) If you have a hard time getting the cover to stick use a little bit of whiped egg. Then fry. Make sure to dry your veggies after chopping this will help them stick. This workes best with fresh fish.
