that is crazy! We do catfish like the second video shows. but I gave up fileting perch because so much meat gets wasted. I can't wait to try the first technique on the perch.
southerners (like myself) remove the scales from perch and bluegill then remove the head and guts. the fish is then covered in corn meal with salt and pepper then fried in hot oil. terrible for you but hard to beat on the table!
