Cut eel will stay on the hook very well. If you try to toss a live eel hooked through the lips however, he's going to fly off the hook. Squid really depends. To be honest, I don't see you making a 100 yard cast with a whole squid. The body would be like a parachute at some point in the cast. Now, that's all a guess, as i've never tried launching whole squid at range before.
If you're fishing the jetties, it really depends on the scenario as to what rod and reel to use. It also depends on what you're fishing for. Everyone wants a universal rod and reel that can do it all. The fact of the matter is, there's no such thing. A lot of times, each species or small group of species require specific equipment in order to be successful. That's just how it is. The people that don't except that logic are rarely successful in their efforts to be consistent targeting certain species of fish. If you're going to surf fish for Striped bass, you need a rod and reel capable of sending a bait past the breakers. If you're going to fish the rocks for sheepshead, you need a rig that's sensitive and has a lot of back bone. If you're going to send a balloon out for a shark off the jetties, you need a heavy stand up rod with a conventional reel.
Another question is how close you can get to the water when you are fishing the jetties? If you can't get to the edge, you may need a bit longer rod to keep them off the rocks. Are you elevated on the rocks? You may need to consider various different models of gaffs or long reach nets to land your fish. Getting the fish to the rocks is one thing, actually landing them is another.
