i have to agree with the hookster on this one having just enjoyed some inch and a half elk steaks done southwest syle in a dutch oven skillet.they were fantastic.have tried em in a convention pan and they are not the same.save the liners for what they are made for desert. heres the recipe for the elk steaks its easy and they are deliousious.1lb elk steaks cut thick i like my meat pink 1 packetsouthwestmarinade you put it on dry 1 teaspoon liquid smoke huck steaks in to a duthch oven skillet with some oil hot let meat sweat three times remove from heat add liquid smoke. its really good i normaly wrap all my elk in bacon and cook on the barbucue,but my daughter got me to try this and i really enjoyed it.
