This may be a way to do this for him. If he's really young and just excited about eating some fish that "he" caught, Go to the market and buy some filets and put them in the fridge. Next time he catches some teach him how to clean fish and dispose of the remains etc, then tell him you have to put the fish in the fridge and let them chill a bit.
You see where this is going eh? Now take out the filets and show him how to bread then and prepare them for cooking and then enjoy. I know it's kind of decieving but this way he gets to learn a little more about fishing and how to prepare them for cooking.
If he is a teenager or just a bit younger and knows all about these things just tell him the truth that you don't believe the pond water is right for eating those fish and then some weekend take him on a nice fishing trip to a lake or river that DOES have quality water for fish that can be eaten and hopefully he catches some to bring home!
