You're right, that's why I keep coming back to Hopkins to have my fish smoked. In my opinion it isn't worth the cost to buy the equipment and smoked them myself.
However, I can appreciate those who enjoy smoking their own fish. It would be nice to experiment with different wood varieties and mixes and different brine receipes.
