I have never caught and cooked my own but have looked a few sites about how to do it.
Those are some nice looking ones you caught. Getting the trap out of the hole may be the biggest problem. I do have a question in to the fish and game about the hole size being a 10" max. I should of asked if 10" square was ok as well.
