Crayfish through the ice?

I've looked at the regs and It looks like its leagal to trap them in the winter as long as you can get your trap in a ten inch hole. what works really good for bait is fish parts. They normally eat dead fish so they come in by the dozens for a fresh trout carcas. If you need some tips on how to eat and cook them let me know.
