As was mentioned, a knife through the gills and hang it upside down. The fish will bleed out rather fast.
There are a couple more methods too that I have found effective.
1. Smash it over the head with a small club.
2. Immerse it in the freezing water of your ice chest.
You will notice that neither of the 3 methods will be found on the PETA website.[cool]
