For bluegills, I use red worms or baby nightcrawlers on regular #8 Eagle Claw hooks. I take my longnose pliers and mash the barb down a little bit to facilitate hook removal. Since I've been mashing the barb down, I haven't had to leave a hook in a fish for the last 10 fishing trips... I just use needlenose or longnose pliers to pull the hooks out.
As hook size goes, #8 seem to be the right size to keep the small fish off and keep the 8" or 10" fish from swallowing.
