I've had good luck using fresh cut bait for channel cats. Often, I'll catch a pearch or two on night crawlers, I'll cut these up into little steaks as soon as I get them, then rig up a slip-sinker rig and a hook and I'm into some cats.
Also, shrimp. I don't know what it is about them, but some thawed shrimp seems to work every time for me for catfish.
I've also been catching a few good sized ones on spoons lately. I used to think they wouldn't bite artificial baits, but experience tells me different.
