The mudbugs, crawdads, or craw fish are best when they are harvested from nice clear water instead of in your back yard.
We used to catch them in great quantities when I lived in Sacramento CA. We would dive for them in some nice Salmon waters.
After harvesting close to 100lbs of them, we would take them home, steam them and peel the meat out of the tails. They were always succulent and delicious dipped in some nice melted garlic butter.[cool]
