Burrowing Mud Bugs.

I apologize for the link not working. I am terminally inept when it comes to moving messages around.[crazy]

Fly Goddess. One of the cautions about eating those little buggers is that they absorb a ton of Lawn Care products in their little tails.

However, Mudbug boils are a Staple in the South.[cool] But we normally buy them from the growers. A family of four will smack down 60 Lbs at a sitting.

Strangly enough, I didn't hear of one MudBug farm losing anything to Hurricanes Rita or Katrina.
When Bad weather comes, the Mudbugs burrow down in the mud.
