I totally agree with your philosophy. That is, because there are so many good eatting fish out there, why bother. I can see targeting both species for sport, since they are incredibly strong and redily availible. However, I couldn't see targeting specifically for thier food quality.
I actually filleted an AJ once and it had worms in it. That was my discouraging moment in regards to Amberjack. I had all intentions of eatting that fish until I saw that.
As for Bowfin, I can't count the times i've caught big bow's and they puked a foul smelling slime in the bottom of my boat. That alone was enough for me. I figure if they can produce something that is that foul smelling, the meat probably isn't far behind. [unimpressed]
