My favorite fish for eating are, walleye, bass, bluegill, perch and catfish. I never cared much for trout until we started deep frying them in peanut oil, and we even do this will most all fish. We use 2-cups of flour and a tablespoon of fish seasoning mixed. Make sure your fish is wet, dip in mix and cook it in the oil.
We do freeze fish...freeze in salted water and it will not freezer burn and when thawed and cooked, it will taste like fresh fish. I have never ice fished, so I keep some frozen to eat in the winter. I also like smoked trout, just bought a smoker and would like a good recipe for smoking.
