Wow, Ron, I love sushi, and that description of yours made me salivate. Here in Provo, Utah, there are few really good sushi places (that I know of), but those that do serve it well, provide some delectable offerings of shrimp, tuna, salmon, etc. on beds of rice. Yum!
Anyway, back to the original question: My favorite fish to eat are freshly caught salmon, walleye, brookies, brownies, 'gills, smallies, and bucketmouths--in that order.
There always seems to be something very satisfying about catching a fish in local waters, cleaning and preparing it properly, and eating it the same day.
I normally practice C&R, but occasionally I'll keep just enough of the fish I'm targeting for the day and serve it up to my family. Good stuff!
