[center][red]Lemon Chicken with noodles[/red][/center] 8 ounces medium no-yolk egg noodles 1 tablespoon lemon juice 4 boneless, skinless chicken breast halves (about 1 pound total) 1 teaspoon paprika 1/4 teaspoon ground black pepper 1 tablespoon olive oil [ul] [li]Cook the noodles in a large pot of boiling water for 8 minutes, or until just tender. Drain and keep warm. [li]Place the chicken between sheets of wax paper and pound lightly with a mallet to an even thickness. [li]In a shallow container, mix the oil, lemon juice, paprika and pepper. Dip the chicken in the mixture until coated. [li]Heat a no-stick frying pan over medium-high heat. Add the chicken. Cover and cook 8 to 10 minutes, or until the chicken is opaque.
