The technique you describe is almost exactly the same as we use down here and also out in the Western Pacific Islands. Out their the water gets deep really quick like in your area and we fish for wahoo in about 60 metres.
We have our own slim line 48 oz lead bomb that we attach and use 200gm Big Bazooka lures with a single stainless 10/0 and a spinner blade attached to the hook. We use mostly red/black or orange black nylon tails with an outer mylar skirt for best results.
Biggest wahoo to date is 72 kg (or 158 lb).
